For a starter rich in fiber and vegetable protein, here's a recipe that perfectly matches fish and legumes. In particular, a shrimp pass with exquisite lupins and cauliflower to start the meal in a healthy and light way.

PREPARATIONS

Put the lupins in abundant water and cook to the desired cooking, at this point peel the lupins and put them in a mixer and blend adding the extra virgin olive oil, keeping aside some unpeeled legumes.
Take a large saucepan and cook the prawns in abundant salted water for a few minutes (depending on the size), once cooked peel them, at the same time in another pan blanched the cauliflower after splitting it into florets.
Serve pouring the cream of lupins into a dish, place the prawns on one side, add the cauliflower, a drizzle of extra virgin olive oil with a sprinkling of pepper on the plate and garnish with some unshelled lupins.
