Some call it past, some velvety, some cream. But they are not synonymous. The past is a mix of peeled and smoothies vegetables. In this recipe the passata is pumpkin and potatoes with the delicious Itrana Olives, to be enriched with cheese and toasted bread. A fast, light and tasty appetizer.

INGREDIENTS:

Pumpkin
600 g
Black Itrana Olives of Lazio
120 g
Potatoes

Vegetable broth to taste

Fresh goats cheese
100 g
Toasted bread

Extra virgin olive oil to taste

Pepper to taste

PREPARATIONS

Remove the skin and the seeds from the pumpkin. Cut it into small pieces. Peel the potatoes and cut them into small pieces.
Put everything in a saucepan with a few ladles of vegetable broth and cook until the vegetables are flaked, adding more broth if necessary. At this point, place everything in the mixer and create a cream, with a drizzle of oil. Season it with salt and pepper.
Pour the cream into a shallow dish. Serve by adding the Gaeta Itrana del Lazio Olives with the crumbled goat's cheese, cubes of toasted bread and a drizzle of olive oil.
