With its slightly bitter flavour, it is used extensively in the kitchen in sauces for pasta and with white meat and game. It also has a long tradition in vegetable dishes and the numerous fish recipes from the local area. This is undoubtedly one of the olives most commonly used by chefs in international cuisine.
Remove the skin and the seeds from the pumpkin. Cut it into small pieces. Peel the potatoes and cut them into small pieces.
Put everything in a saucepan with a few ladles of vegetable broth and cook until the vegetables are flaked, adding more broth if necessary. At this point, place everything in the mixer and create a cream, with a drizzle of oil. Season it with salt and pepper.
