Leccino olives have a spicy and slightly aromatic flavour and are most frequently used as snacks or in appetisers of cheese and cured meats. They are used to flavour dishes of both meat and fish. Another use is in the dish, with potatoes, peppers, aubergine and tomatoes.
Boil the water, once boiling; add the pasta and the cooking salt.
In the meantime, wash and prepare the squid by cutting it into small pieces. Heat some extra virgin olive oil in a pan, add a clove of garlic and the chilli, add the small squid and let it cook for a few minutes, finally add the Leccino olives.
After draining the pasta al dente, pour it into the pan and mix adding a little cooking water. Serve very hot.
